I think it’s hard to go past a good prawn cocktail. The magic is to do with the texture supporting the palate: the crunchiness of the lettuce freshens the prawns in their spicy sauce, and the sauce anoints the lettuce. Bistro Moncur’s version includes snipped tarragon leaves because it’s my favourite herb and marries so well with this cocktail.
