Some say that Lyonnaise cooking is the richest in France - a claim that probably stems from the region’s very fertile soil, which produces incredibly full-flavoured vegetables. To approximate this intensity of flavour, try to buy organic onions and beetroot, and see how the bitterness of the dandelion brings balance to these earthy flavours. Dandelion leaves are often available to order from greengrocers. Failing that, substitute a combination of frisée and the small tender leaves from the
