The essential ingredients of this perfect summer salad are tomatoes, olives, capsicum, lettuce and anchovy fillets enriched with the best olive oil and a little vinegar. Hard-boiled eggs, quartered or sliced, help to bind and enrich the flavour. Traditionally, tuna was not an integral part of a salade Niçoise but when used it was always canned — the moisture helps to coat the vegetables as the salad is tossed and harmonises the flavours. I also like to include some torn basil leaves and to
