When I planned the first menu for Bistro Moncur I knew it would have to include a simple tomato salad. Of course the question was whether there would be a constant supply of flavoursome tomatoes all throughout the year. Fortunately, the vine-ripened tomato industry came to the rescue and so the tomato salad became a fixture on the menu; it has only once been taken off the menu due to poor raw materials.
