This soup is rich in chicken flavour and is reminiscent of my mother’s soup, although her version would have been less extravagant. This soup may be cooked like a white chicken stock by simply combining everything in a stockpot and cooking as directed, but I prefer the golden colour and richer flavour achieved by roasting the chicken bones and pieces beforehand.
