This is a lovely combination that uses the acidic, earthy flavour of spinach to balance the rice. Tiny morsels of gorgonzola complete the palate, adding saltiness and richness.

For a simple lunch, serve this risotto after a terrine or rillettes, accompanied by a green salad and followed with fresh fruit. A dry rosé wine would match this menu beautifully.
