For an instant lunch or supper, turn soft polenta into a warmed bowl and scatter with gorgonzola broken in tiny pieces [don’t forget to moderate the salt level of the polenta to compensate for the saltiness of the cheese]. Serve with a big salad of crunchy lettuce and tomato wedges moistened with extra virgin olive oil and red wine vinegar.
