This is another dish for a special dinner. The crisp crackling prevents the delicate pork meat from drying out and offers a contrast of texture. A perfect accompaniment is Sauté Kipflers with Confit Garlic and Sorrel; if you wish to serve a green vegetable, Braised Witloof or Brussels sprouts with walnuts are good choices.
