Most people love a delicious cauliflower Mornay - or cauliflower cheese, as it is more commonly known.

  1. Separate the florets from the core of the cauliflower then trim the stalks so that the flowers will sit in a single layer in a shallow ovenproof dish. Soak the cauliflower in cold water for 20 minutes. Butter the dish and preheat the oven to 100°C.
