The slightly nutty flavour of spinach calls for an enrichment of olive oil or butter, while garlic helps to soften its acidity.

Ingredients

  • 1 large bunch spinach, well-washed and coarse stalks discarded
  • 1 tablespoon extra virgin olive oil
  • ½

Method

  1. Place the spinach, oil and garlic in a large saucepan with a tight-fitting lid.
  2. Season lightly, cover the pan and sweat over moderate heat, stirring frequently, until the spinach is soft.
  3. Taste for seasoning [salt helps to counter the acidity] and finish with a touch of lemon juice and a little freshly ground nutmeg, if desired.
