This is a very useful, easily made pastry that freezes well, ready for that emergency canapé [see ‘Savoury Choux Pastries’].
One of the simplest choux pastries originates in Burgundy and is called a gougère. Traditionally formed as a ring of choux puffs, the pastry is scattered with gruyère cheese before baking and served after the main course to marry with any remaining red burgundy. Even if you think there won’t be any wine to finish off, ma
