I came by this recipe through one of my young chefs, Simon Fenwick - he brought it back from London, where he worked briefly in some remarkable restaurants. This is typical of the exciting exchange of recipes between cooks, though they are not always so generous!

The recipe makes a 26-28cm tart. It is very rich, not at all sweet and needs no garnish save a spoonful of whipped cream to provide a contrast - although a few raspberries on the side would be a delicious t
