The Yarra Valley produces wonderful wine and some excellent cheeses, as well as a wide range of lavender products from Warratina Lavender Farm. Since discovering their edible lavender flowers, I have used it to make ice creams, frozen parfaits, pastry creams as well as these delicious tartlets. The affinity of lavender with pears is marvellous and the tiny flowers look so pretty.
