A raspberry coulis is nothing more than raspberries, sugar and a touch of lime juice to balance and accentuate the fruit flavour. In the early 1980s I was lucky enough to meet the extraordinary chef Phillip Searle, and it was he who recommended the use of lime juice over that of lemons - the difference is remarkable.
