This magical combination of sweet and spicy flavours makes a refreshing dessert in minutes and is ideal to follow a rich main course. Buy a half-bottle of sauternes and serve the balance to accompany the fruit.

Ingredients

  • 3 large mangoes
  • 3 tablespoons sauternes or botrytis riesling
  • coarsely ground white pepper

Method

  1. To remove the fleshy cheeks from a mango, place it horizontally on a work surface. Gently press the palm of your hand on top of the mango, keeping the fingers slightly uplifted. Insert a sharp knife just above the stalk and, applying a slight downward pressure and cutting away from yourself, for safety’s sake, pass the knife horizontally over the seed to remove a cheek.
