As autumn approaches, the pistachio harvest yields nuts that are slightly soft, deliciously sweet, and available from the best greengrocers.

Here is a simple dessert that is quickly assembled, provided the nuts are dealt with in advance. It also works well with yellow peaches in place of the pears; in either case, the fruit needs to be of exceptional quality.
