Joyce is a friend’s mother who lives on a country property that has eggs straight from the chook house and a lemon tree or two. When she has visitors, Joyce bakes this simply-made cake for afternoon tea, using a lemon from her tree and fresh eggs collected that morning! It’s a favourite with everybody - particularly the office staff at the Woollahra Hotel and Bistro Moncur, when I have a spare moment to bake it for them.
