Some years ago I attended a fund-raising concert for the Australian Brandenburg Orchestra and the organisers provided afternoon tea, including this delicious cake. I persuaded them to part with the recipe, and christened it ‘Serious Orange Cake’.

Ingredients

  • 1 orange, weighing about 150g, washed well and diced, with pips removed
  • 200 g sugar
  • 3 x 60 g

Method

  1. Preheat the oven to 170°C. Grease and line a 24cm diameter springform cake tin with baking paper.
  2. Place the diced orange in the bowl of a food processor with the sugar and process until very smooth. Add the eggs one at a time, mixing well between addit
