These have an amazingly delicate texture. They were served as the house petit four during my years at Claude’s. We found we could freeze the uncooked shortbreads, and so we would bake them as close to serving time as possible to ensure extra freshness. The result is a very delicious shortbread that I feel sure you will enjoy making, as well as eating.
