  • 1 kg/2 lb 4 oz floury potatoes, such as Desiree, un peeled

Method

  1. Put the potatoes in a large saucepan, cover with cold water and add a pinch of salt. Bring to the boil over a high heat, then turn the heat down to low, partially cover with a lid and simmer for 30-40 minutes, or until completely cooked through.
  2. Meanwhile, preheat the oven to 200°C/400°
