  • 125 g/ oz unsalted butter, softened to room temperature and roughly diced

Method

  1. Put the butter, flour and salt in a mixing bowl and rub together with your fingertips until you have a crumbly, powdery texture. Add the egg yolk and milk or water and continue working the pastry until the ingredients are combined and the texture is smooth. Turn out the pastry onto a lightly floured work surface and knead for 1-2 minutes until silky smooth.
