  • 115 ml/ fl oz/scant ½ cup full-fat milk

Method

  1. First make a sabayon. Put the milk, vanilla pod and vanilla seeds in a saucepan over a low heat and bring just to a simmer. Remove from the heat, cover with a lid and leave to infuse for 20 minutes. Remove the vanilla pod, wash and pat dry with paper towel. (You can add the pod to a jar of sugar to make your own vanilla sugar.)
