I wanted to try a twist on a pithivier, a puff pastry torte, and I decided filo pastry would make it both unusual and lighter. I am sure you will find this fun – especially when you get to eat the delicious results.

Ingredients

  • 270 g/ oz unsalted butter
  • 2 boneless skinless corn-fed chicken breasts, about 180 g/6¼ oz each, cut into 2

Method

  1. To make the clarified butter, put 250 g/9 oz of the butter in a saucepan over a very low heat. Leave for 30 minutes until the butter has melted and the solids have fallen to the
