When you are cooking with chocolate, the choice of chocolate is very important. Here I have chosen chocolate with 60% pure cocoa – not over-bitter, as a lot of people don’t like that, but instead one that is a touch richer, with hint of tobacco leaf, bark and spices coming through to give a thoroughly modern twist. The warm cookies have a soft, cake-like texture.
