Ingredients: 60 g/2¼ oz unsalted butter, melted, plus extra for greasing; a pinch of salt; 4 eggs; 150 g/5½ oz/¾ cup caster (superfine) sugar; 1 tsp baking powder; 1 small bunch of wild thyme; 170 g/6 oz/1¼ cup plain (all-purpose) flour, plus extra for dusting; 7 tbsp double (heavy) cream; juice and zest of 1 lemon; 1 handful of fresh dandelion flowers, sepal and bracts removed; juice of 1 lime; juice of 1 lemon; 4 tbsp caster (superfine) sugar; 2 wild thyme sprigs

These three wonderful ingredients transform this classic into something special. The scent of wild thyme, the acidity and fragrance of fresh lemon singing on your tongue and the sweet bitterness from the dandelion flower – they go so well together. This was another experiment during lockdown in spring 2020 and we all loved it. Prepare the tea, I’m on my way!
