This is another favourite of mine. When cod is really fresh (and line-caught if possible), you can see a small rainbow on the flesh. There’s no better way to cook this lovely cod than to pan-fry it. Cooking the skin is not only tastier, it holds the flesh together. The white bean puree will bring so much nuttiness to this dish, which is a great companion. Garlic crisps bring the finishing touch of goodness.
