The halibut season is from April to August, and it’s generally caught in the Atlantic and the North Sea. In the north of France (especially around Dunkirk) it’s really popular slightly smoked. What a great fish! It’s not used enough at home as the price can be a bit steep, but I do recommend trying it when it’s in season, as it’s absolutely delicious, especially when simply pan-fried with a light curry sauce.
