Chicory (Belgian endive) is a very versatile vegetable and while it is perfect uncooked in a salad, it also tastes delicious cooked in a tart. Here, it is combined with orange juice, a drop of honey and fresh thyme, which lift the chicory to new heights. The orange zest and walnuts sprinkled over the top to finish the dish beautifully.
