I have yet to find someone who doesn’t like cauliflower gratin! During lockdown I made it with saffron and lemongrass. It was a bit of an experiment but the flavours go so well together. Be careful not to overpower the dish with saffron; it must be there but not “in your face”, so to speak. This is a great vegetarian dish by itself, or delicious with roast pork.
