I’m not a pastry chef as such, but when I have the time I love to experiment. The strength of chilli can be deadly! But then the much-needed lemon brings balance and freshness. I just knew the combination would work. Lemon is a classic flavouring for cake but the chilli is the icing on it (so to speak!). Make sure that you soak the cake while it is still warm so that it can absorb the syrup. This makes a fabulous desert but you could also enjoy a slice with a cup of Earl Grey tea in the aft
