When I hear “caramelized” in relation to fruit, I can almost taste it already, whether it’s pineapple, apple, peach or apricot. In this recipe I’ve used melon. You will need a just-ripe, tasty fruit, so you can appreciate the full flavour and sweetness of it contrasting with the bitterness of the grapefruit. And finally the delicate scent from the rosemary flower. A delightful trio! Serve warm with a lovely slice of cake.
