The almond milk here helps to tenderize the chicken. It’s best to marinate it overnight so the flavours really infuse the meat and we get that lovely scent of garlic, thyme and lemongrass. Accompanied by Thai rice, this is an absolute delight.

Ingredients

  • 1 chicken, prepared and cut into 8 pieces
  • 1 tbsp ground turmeric
  • 1 litre/

Method

  1. Place the pieces of chicken in a large, shallow Pyrex dish, then season with the turmeric and some black pepper. Pour in the almond milk, cover the dish and leave it overnight in the refrigerator.
