Pork shoulder is a very tasty part of the pig and as it has a little fat it brings a lovely flavour to this dish. Although I think the secret to the success of this recipe lies in the cabbage! I have used a pointed cabbage, also called sweetheart, which is braised in a delicious combination of chilli, ginger and honey that gives it a wonderful balance of flavours.
