  • 12 cups (3 l) plus cups (300 ml) water

Method

In a large pot, bring 12 cups (3 l) of the water to a boil. Coarsely chop the onion, cut the carrot into 6 pieces, and add them to the pot, along with the parsley, garlic, and the salt and pepper. Reduce heat to low, and simmer for 30 minutes.

Add the duck thighs to the pot, adding water if necessary to ensure all ingredients are covered. Simmer the duck until it is fork-tender and begi
