A kanapka, like a French tartine, is nothing more than a slice of good bread topped with whatever you like. Open sandwiches, often buttered, with slices of ham, cheese, and sweet tomato, are probably the most popular fast breakfast food in Poland. But I like to treat a kanapka as a painting, where only my creativity is the limit. Every time I make them, I top my kanapki with something different. Here are a few of my favorite combinations.
