This recipe was inspired by cebularze lubelskie, wheat buns topped with diced onion and poppy seeds, from the city of Lublin in southeastern Poland. And, my oh my, are these buns good! They’re soft and vaguely sweet, thanks to the caramelized onion–apple topping, but have a crunchiness in every bite—in other words, they are exactly how a savory bun should taste. Don’t skip the poppy seeds; they are part of what make these buns so special.
