This is the most characteristic dish from my region, Podkarpacie, in southeastern Poland. These buns are made only with flour, buttermilk or kefir, a bit of salt, and baking soda. Since they are so quick to prepare, they were originally baked when there was no bread available, but they are so delicious that I like to eat them any day of the week. Proziaki taste best straight from the pan, served with butter and sea salt flakes or with your favorite preserves.
