Creamy Sauerkraut Soup

English is not my first language, but even in Polish it’s hard for me to put my love for this soup into words. It’s perfect. One of a kind. Full of nuanced flavor but with nothing complicated about it. Don’t be afraid of the heavy cream alongside the otherwise light ingredients—it tones down the flavor with fermented, tangy, bright notes and gives the whole thing a more delicate taste.
