The almond soup is a holiday version of Polish “nothing” soup (zupa nic). It refers to the tough times when our grandmothers didn’t have much to eat—only a few eggs, some milk, and a little sugar. It sounds like a dessert, but it’s usually served as breakfast or podwieczorek, a sweet meal between lunch and supper. This indulgent recipe is served with puffy clouds of softly poached meringue floating on top and sprinkled with a pinch of cinnamon that warms from the inside of the
