Potato salad is considered a German-style dish, heavy in mayonnaise, sour cream, and onion. In my opinion, all that is too heavy for a “salad.” I prefer to swap out the mayo and cream for a sweet-tangy whole grain mustard dressing and crunchy pickled radishes. My homemade radishes have a punch of allspice, which works here perfectly with the sweetness of pears. It isn’t odd—it’s extraordinarily good.
