There are some things that bring me into a blissful oblivion—and these hot beets are one of them. I don’t know if it’s their sweetness, balanced with sour cream and a bit of lemon, or maybe it’s the creaminess and warmth that goes so well with mashed potatoes. It’s one of those simple dishes that my grandmother used to make that tastes absolutely the best for me.
