Sweet, juicy summer tomatoes from the farmers market are incomparable. I eat them alone or with just a pinch of flaky sea salt. But this horseradish dressing has an earthy, sharp taste, which complements them so well and makes them taste even better.


  • tablespoons prepared white horseradish
  • 2 tablespoons cold-pressed rapeseed oil

  1. Stir together the horseradish, rapeseed oil, lemon juice, and honey in a medium bowl. Season with salt and pepper.
  2. Add the tomatoes and parsley; coat carefully with the dressing. Top with more pepper, flaky sea salt, and more parsley.
