Charmingly small and generously filled with dainty wild forest porcini, these are among my most beloved dumplings. Traditionally, on Christmas Eve, uszka (“little ears”) float in Barszcz czysty czerwony (Clear Fermented Beet Soup), which gives them a lovely color and even more flavor. They are perfect when they’re fresh, but save some to reheat—served with butter and chives, and eaten while sitting on the couch, they’re a perfect little treat
