Green garlic, which resembles a scallion or very small leek, has a sweet pungency and a pure, clean flavor that is best highlighted by gentle simmering. Harvested just before the cloves have formed, it is available at farmer’s markets in the early spring. This dish may be served as a simple first course or as a meatless entrée when paired with some lovely spring vegetables.
If green garlic is not available, you can substitute a mixture of leeks, scallions, and a few garlic cloves.</
