Prepare your mise en place.
Combine the orange juice and honey in a small nonreactive bowl. Add the cilantro and stir to blend. Slowly whisk in the oil. When emulsified, season with salt and pepper to taste. Set aside at room temperature until ready to serve. Whisk to re-emulsify before serving.
