Looking back to the lessons I learned at FCI, I realize how very important it is that all of the ingredients in the dish be pristine. In this dish, everything must be of the highest quality as it is quite honest and direct in its preparation. I make it often at Harvest, using locally raised ingredients.


  • Four 230-gram (8-ounce) pieces boneless pork loin, trimmed of all fat
  • Coarse salt to taste


Prepare your mise en place.

Preheat the oven to 204°C (400°F).

Season the pork with salt to taste and then rub it generously with the coffee rub.

Heat a large, ovenproof sauté pan over medium–high heat. Add the clarified butter and when very hot but not y
