I am a firm believer in the idea that with good caramelization you can extract incredible flavor from very simple ingredients. I believe that this recipe illustrates that point perfectly.
Prepare your mise en place.
Place the butter in a heavy-bottomed saucepan over medium heat. Cook, stirring occasionally, for about 5 minutes or until it reaches the nut brown (noisette) stage. Add the fennel and onion and cook, stirring frequently with a wooden spoon, for about 10 minutes or until the vegetables are golden and caramelized. Do not let them get too dark.
