It is said that I push the limits of culinary expression, and I guess that I sometimes do. However, it is my experience at FCI that has allowed me the base from which I can explore new methods and techniques of preparing familiar and not-so-familiar foods. This dish has some simple elements and some exotic ones, but I think that they come together to express classic ideas. (Note: Most of the components require advance preparation.)
