Cassoulet, the classic casserole dish from southwest France, usually contains a variety of cuts of pork, goose, and duck mixed with white beans and herbs and takes many hours to cook. My very loose interpretation, which is a “healthy” take on the original, keeps the beans but substitutes shrimp for the meats. This dish can land on the table in 30 minutes.
