Prepare your mise en place.
Combine the sugar and water in a russe over medium–high heat. Bring to a boil, stirring frequently. Immediately remove from the heat and strain through a chinois into a clean heatproof bowl. Place in an ice bath to cool. Use as directed in a specific recipe. Simple syrup can be stored, covered and refrigerated, for up to 1 month.
